Light, fluffy and oh-so melt-in-your-mouth delicious. Japanese cheesecake is a much-loved dessert that is somewhere between a creamy cheesecake and an airy soufflé. The sponge-like texture of Japanese cheesecakes is due to the Japanese technique of whisking the egg whites separately before incorporating them by hand for aeration. A great part is that you can enjoy Japanese cheesecake hot from fresh out of the oven or cold. Here’s a look at where you can get your hands on a Japanese cheesecake in Metro Vancouver.
