Dry Hot Pot: What It Is and Why You Should Try it

It’s hot pot time but a dry one!

One of my favourite hot pot restaurants in Vancouver, Liuyishou Hot Pot, is still open for takeout and delivery and you might just want to try something a little different from their menu.

While they are known for their hot pot dining experience, they also offer a dry hot pot.

What is a dry hot pot?

As a refresher, a traditional hot pot is a communal, simmering pot of Chinese broth used to cook various raw ingredients including meats, vegetables, noodles, tofu, seafood, dumplings and so forth.

It’s typically a group dining experience that you share with family and friends as you gather around the pot to cook together and eat.

A dry hot pot gives you the same intense flavours of a traditional hot pot but without the sweaty heat of being near a boiling hot pot of broth.

It’s also pre-cooked to perfection such as to save you the effort of putting all the raw ingredients into the broth and waiting for them to be cooked so that you can eat.

A dry hot pot is a more modern dish and faster way of dining without sacrificing the savoury aroma and delicious flavours of a traditional hot pot.

My friend David (@pickydiner) dropped off a nice lunch treat for me from Liuyishou: the Jumbo Spicy Prawns Dry Hot Pot. It was also my first dry hot pot experience!

I certainly tasted all the bold, spicy mala flavours from this dry hot pot and didn’t miss the broth at all. A dry hot pot is a great take-out item to enjoy without the hassle of cooking with a regular hot pot.

Other dry hot pot protein choices at Liuyishou include beef, angus beef, lamb, fish fillet, shrimp, pig feet, chicken wings, pork ribs, or custom mix.
