Vancouver Weekend Brunch: ARC at Fairmont Waterfront Hotel

Life is complicated.  Good food shouldn’t be.  ARC Restaurant is the on-site restaurant at the Fairmont Waterfront Hotel serving Pacific Northwest inspired dishes in a relaxed setting. I recently experienced a lovely hosted staycation at the Fairmont Waterfront Hotel where I enjoyed brunch at ARC.

ARC Brunch Menu

ARC’s simple and focused brunch menu features Breakfast Nachos, Wild Mushroom Roesti, Lamb Shakshuka, Longshoreman’s Breakfast, Croissant Sandwich, and Corn Crusted French Toast. Brunch at ARC takes place 11:30 am to 14:30 pm on Saturday and Sundays.

What I Tried

My family and I enjoyed a few dishes from the brunch menu: the Lamb Shakshuka, Longshoreman’s Breakfast, and Corn Crusted French Toast.

For those who prefer a sweeter brunch entree, the Corn Crusted French Toast ($22) would be a great dish to have. It’s an elevated French Toast featuring brioche bread, matcha solids, yuzu curd, field berries and maple syrup on the side.

The Longshoreman’s Breakfast ($28) is a protein packed meal with two fried organic eggs, Kaseller ham, griddle sourdough toast, maple pork belly, Postmark IPA chorizo, smashed potato cakes and heirloom tomato salad. A fully, loaded hearty dish that gives you a good start to the day.

We also had the Lamb Shakshuka ($24) – a delicious smoky, spicy one-skillet dish with spicy lamb sausage, organic eggs, grilled pita bread, and chermoula.
