On our recent trip to Seattle, we stopped by Indigo Cow Seattle, known to be the first Hokkaido-style soft serve shop in the US.

Indigo Cow is collocated with and has the same owner as Yoroshiku restaurant in the Wallingford neighbourhood of Seattle.

As described in this article from Seattle Pi Hokkaido is Japan’s dairy region, and their famous whole milk produces smooth, clean, naturally sweet flavors.

Indigo Cow partners with a dairy farm in Hokkaido for their soft serve mix which combines milk, cream, and condensed milk from grass-fed cows.

The shop is basically a walk-up counter that faces the street with a few soft serve machines and preparation station inside. It also appeared to be a one-person operation with one staff taking orders and preparing the soft serve.

The flavors might rotate but when we were there they offered Hokkaido Milk; Ceremonial Matcha and Swirl.

The soft serve is priced as small ($4), regular ($6) or large ($8) in a cone or cup. A waffle cone is $1.50 and gluten-free cone is +$2.

For toppings, they have house made fruit sauces; Theo dark chocolate wall +$1.50 or get the Shiratama Kuromitsu Kinako which comes with mochi, brown sugar syrup, and roasted soybean powder +$2.

We got the plain Hokkaido Milk soft serve in a cup and a Shiratama Kuromitsu Kinako Matcha & Hokkaido Milk Swirl. The soft serve was very smooth and had a nice clean, taste. It also seemed to melt rather quickly.
