When it comes to giving a boring meal some more pizzazz, there is one condiment that can help you do so – mustard! Mustard is an easy way of elevating everyday meals into haute casual dishes. Last month, I had the opportunity to learn more about the wide range of mustard uses from leading premium producer of mustard, Maille. The event took place at the Maille Flavour Studio at the Columbia StrEAT Food Truck Fest. They also showed us how to make your own mustard and served Maille’s exclusive fresh mustard on tap!
Since 1747
La Maison Maille has been around nearly 300 years and was established by Antoine-Claude Maille in 1747. The Maille product range includes Dijon Originale, Au Mielle Honey Dijon, and Railfort Horseradish mustard, as well as flavourful vinegars. In Canada, you can find their products at select grocery stores including Urban Fare.
Creative Mustard Uses
One of the fun items we tried were the Bite Size Peach Chutney Glazed Waffles With Crispy Fried Chicken And Maille Honey Mustard Pipette. It was entertaining to squeeze the mustard and drizzle it over the waffle.
Little did I know that mustard could be used in desserts? The Vanilla and Maille Mustard Poached Pear was served in verrine with bourbon mascarpone mousse and a pommery mustard praline topping.

How to Make Your Own Mustard
Headmaster mustard sommelier, Harry Lalousis, was onsite to help us through the process of making our own mustard blend.
We first needed to select a base (Maille Original or Old Style); add mustard (5 tbsp into a mortar and pestle); add two ingredients (berries, syrup, herbs); mash it up and then fill the jar!
My custom mustard had Maille Honey Dijon, blueberries and maple syrup!
It was an overall fun experience to see how mustard could be incorporated into meals as sauces, dips, marinades, glazes, vinaigrettes and even cocktails. For more information, visit Maille online.
