MICHELIN-recommended Hawksworth Restaurant is celebrating 15 years in Vancouver and is offering a First Seating three course dinner. Available Monday to Saturday from 4 PM to 6 PM, the menu is designed for those looking for an earlier dining option, whether before an evening show downtown or a shorter night out.

The menu changes but here is what I tried on my visit:

Starters
Zucchini Salad, light and nutty. Pesto, sundried tomato, and pine nut, with a herbal note and slight tang.

Pork & Duck Terrine, composed and slightly sweet. Wine poached apricot, pistachio, and pickled onion, with balanced sweetness and acidity.

Prawn Wonton Soup, comforting and savoury. Miso dashi with XO sauce, with delicate wontons and a gentle richness in the broth.

Mains
Petrale Sole, crisp and balanced. Brown butter, panko, and broccoli, with a nutty finish and soft interior.

Gochujang Pork Collar, savoury with mild heat. Scallion relish and bean sprout salad, keeping the dish fresh.

Ricotta Cavatelli, comforting and earthy. Wild mushrooms and parmesan, with a savoury, familiar profile.

Dessert
Triple Chocolate, smooth and rich. Passion fruit and gianduja, with a slight tang and nutty finish.
