Why are BC Spot Prawns so Special?

BC spot prawns are the largest of the seven commercial species of shrimp in Canada’s West Coast. Some females exceed 23 cm in length. They are easily identified by their reddish-brown color, white horizontal bars on the shell, and distinctive white spots on their tails.

Sustainable Fishing Methods

Prawn fishermen use baited traps dropped 40 to 100 meters deep along the rocky ocean floor. This results in minimal habitat impact and very low bycatch, making it a sustainable choice endorsed by Ocean Wise.

Expert Buying and Handling Tips

Buying live seafood can be intimidating. Here is how to handle it like a professional:

  • Be Prepared for Lines: Expect long line-ups at the wharf (sometimes hours). Boats usually arrive around 12 PM – 1 PM.
  • The Mushy Factor: Spot prawns have an enzyme in their heads that begins to break down the tail meat the moment they die. If the prawn dies, the meat turns mushy.
  • The Fix: You must cook them live or remove the heads while they are still alive.
  • Transporting: Bring a cooler with an ice pack. Never put them directly in fresh water or melted ice; fresh water will kill them instantly.

How to De-head a Live Prawn

  1. Firmly grab the head in one hand and the body in the other.
  2. Pinch the head with your thumb and index finger.
  3. Twist your hands in opposite directions and pull quickly.
  4. Rinse the tail thoroughly.

Best Ways to Cook Spot Prawns

Keep it simple! Spot prawns taste best when cooked for just two minutes. Overcooking is the most common mistake.

  • Steam: 2 minutes, then a cold water shock.
  • Boil: 2 minutes in boiling water (with the shell on).
  • Grill: 1-2 minutes per side on medium heat.
  • Sauté: A few minutes in a hot pan with or without the shell.
  • Raw: Freshly de-headed tails are perfect for sashimi-style eating.
