The Hotel Belmont Vancouver has launched a new culinary experience at their signature restaurant, The Living Room, with a menu that reflects the essence of the Pacific Northwest.


Chef Will Lew, Food & Beverage Director of Pacific Reach, has refreshed The Living Room’s menu with inventive and flavourful creations featuring local and sustainable ingredients.

Signature Pasta Platter
Shellfish Saffron Tagliatelle / Wagyu Bolognaise / Truffle Squash And Mushroom Rigatoni
For those who can’t decide on just one pasta, the signature pasta platter is the way to go with my favourite being the shellfish saffron with housemade tagliatelle and Crab XO Chilli Crunch and wild pink scallops. Also included are the Wagyu Bolognaise (featuring a hearty sauce along with a wagyu beef) and Truffle Squash & Mushroom Rigatoni (earthy and creamy, with truffle enhancing the natural sweetness of the squash..



BBQ Beef Shortrib
Smoked Bbq Sauce, Guindilla Peppers, Arugula Fennel Herb Salad
The BBQ beef shortrib is wonderfully delicious with tender meat complemented by a fresh arugula fennel salad.

Ahi Tuna Tartare
Salsa Matcha Aioli, Avocado, Crispy Shrimp, Taro Chips
Fresh ahi tuna meets creamy avocado and crispy shrimp, all tied together with a salsa matcha aioli. The taro chips add a satisfying crunch, making this a well-balanced starter that’s light yet full of texture. The tofu hummus and scallion oil provide a silky contrast,

Fried Chicken
Torched Motoyaki, Duck Fat Chili Caramel Glaze, Pickles
For some heat, the fried chicken is a solid, spicy choice featuring tender and juicy chicken glazed in duck fat chili caramel.


Maitake Mushroom
Teriyaki, Brown Butter Crumb, Tofu Hummus, Scallion Oil
Rich umami flavours shine in this dish, with teriyaki and a brown butter crumb enhancing the meaty texture of the maitake mushrooms.

Churro Bites
Spiced Chocolate Sauce, Cinnamon Sugar
To finish, the churro bites are crisp on the outside, soft inside, dusted in cinnamon sugar.

The Elderflower was a lovely floral drink featuring Grey Goose and elderflower liqueur.

Each dish brings a thoughtful mix of flavours and textures, making this menu worth trying.
