The latest food trend to hit Vancouver is Japanese Soufflé Pancakes and Vancouver’s first cafe dedicated to these jiggly, wiggly stacks is opening next week.
Fufú Japanese Soufflé Pancake Cafe is set to open their doors on Saturday, September 7 at 1266 West Broadway.

On the menu at Fufú are both sweet and savoury options. The Classic version ($12) features either 3 stacked soufflé pancakes with butter, maple syrup and Fufú icing sugar or with salted cheese whipped cream and icing sugar.
Other sweet options include Matcha Mochi ($13.50), Mixed Fruit ($14), and Tapioca Pearl Milk Tea ($14) (available after 3 pm only).
Fufú also has a few weekly features like Nutella & Caramelized Banana ($14.50), Tiramisu ($14), and Lemon Creme Brulee ($15).
On the weekends, Fufú will have brunch-worthy savoury options until 3 pm. These include Smoked Salmon & Avocado ($16) and Eggs Benedict ($16). Additional sides like sliced avocado, bacon stripes, Oyama Sausages and so forth are also available.
As for drink options, Fufú has numerous espresso-based drinks ($3 – $6), tea lattes ($5 – $6), fresh fruit sodas ($6), and cheese foam fruit teas ($6.25).
At Fufú, you’ll also find pastries with French and Asian influences by Remi Patisserie like flans, tarts, cookies and more.

Fufú features an open kitchen where guests can observe the pancake making process. The airy, egg-white heavy batter is piled high onto the griddle and then slow-cooked to golden perfection. The result are lightly toasted sides with a cloud-like center.
The process requires a lot of patience and care to get the optimal texture for the perfect wobble. The pancakes take around 15 minutes to make at Fufú.

Tapioca Pearl Milk Tea Soufflé Pancake
2 soufflé pancakes, Earl Grey milk tea sauce, and tapioca pearls
Lemon Crème Brûlée Soufflé Pancake
2 stacked soufflé pancakes, house-made lemon crème brûlée sauce, lemon yogurt ice cream and fruits
Grand Opening Special
On Saturday, September 7, Fufú will be giving away Classic soufflé pancakes to the first 50 customers, then offering the Classic plates for 50% for the rest of the day.
