Friends and Chefs Colin Uyeda and Pricilla Deo opened the restaurant in Kitsilano with a focus on plant-based fare prepared with care alongside local wines, ciders, and non alcoholic beverages.

The fully open kitchen allows diners to watch the team prepare dishes throughout service.

Folke recently relaunched weekend brunch on Saturdays and Sundays. The menu offers savoury plates and baked goods intended to be shared around the table.

Chicory Salad was a refreshing start. Winter radishes added crunch while walnuts contributed nuttiness. Japanese pickles and a salted plum vinaigrette brought gentle acidity that balanced the natural bitterness of the chicory.

Tamago Sando is a plant based interpretation of the classic Japanese egg salad sandwich. The chickpea egg salad was creamy and lightly seasoned, served on soft Japanese milk bread with scallion mayo and a touch of togarashi. It felt comforting and familiar in flavour.

“Chicken” & Waffles featured oyster mushroom prepared as the savoury component atop a sourdough waffle. The waffle had a pleasant texture while cinnamon maple butter introduced warmth and sweetness that worked well with the mushrooms.

Carbonara Risotto offered a comforting option for brunch. The dish included ruta bacon, chickpea egg, caramelized onion, braised greens, and parmesan. The flavours echoed traditional carbonara while remaining entirely plant based.

To finish, we tried items from the Cake Table, which offers a rotating assortment of baked goods. On this visit there were Chocolate Chip Cookies, Lemon Earl Grey Bundt Cake, Banana Bread Cinnamon Rolls With Banana Caramel, Spiced Pear Hand Pies, and Tiramisu Brownies. The selection allows guests to try several desserts in one sitting. A take-home box option is available.

Folke continues to offer a thoughtful vegan dining experience in Vancouver, and the weekend brunch provides another opportunity to explore their approach to plant-based cooking.
