Wild BC salmon season is here, and restaurants across the province are featuring special dishes that celebrate one of British Columbia’s best-known ingredients.

BC restaurants are celebrating the season with creative dishes using wild salmon sourced through Organic Ocean.

I recently visited LIFT Bar Grill View in Vancouver to try three salmon dishes by Executive Chef Andraza, each offering a different take on the season.

Wild BC Salmon Main Feature
For their main feature on the menu, wild BC salmon was served with fried polenta, roasted nori, broccolini, baby carrots, beurre blanc, and herb oil.

The salmon was tender and rich, with a buttery sauce that worked well with the fish. I liked the crispy polenta on the side, which added some contrast to the softer salmon.

Sockeye Ceviche
The Sockeye Ceviche was made with fresh sockeye salmon, sweet soy, cucumbers, pickled shallots, and caviar, served with warm blinis. The salmon was tender the cucumber added some crunch, and the pickled shallots gave it a nice tangy flavour. The warm blinis made it more satisfying and were great for scooping up the ceviche.

Salmon Roe Blini
The Salmon Roe Blini came with Wild BC Pacific salmon roe, crème fraîche, and chives. The salmon roe had a salty pop that paired well with the smooth crème fraîche and soft blini. It was a simple bite, but the flavours worked nicely together.
