PNE Fair in Vancouver is showcasing inventive new dishes that blend Canadian comfort with global flavours. Here’s a look at what to try this year.
At Cheeky Italian, the BC Blueberry Mascarpone Crumble Pizza takes a sweet approach to pizza with blueberry ginger compote layered over cinnamon orange mascarpone cream. The richness of the mascarpone balances with the fruit, creating a dessert-style slice.
The Marchant Family is celebrating 30 years at the Fair with the Cowboy Candy Ice Cream at Summerland Soft Serve. This mango soft serve is rimmed with Tajin and topped with candied jalapeños, combining refreshing fruit with a hint of spice.
Fusion flavours continue at Rotato Potato with the JapaCurryBeef, a dish that brings curry beef to a Canadian favourite. The dish layers crispy fries with savoury Japanese-style curry for a comforting mix of textures.
International Perogies has reimagined their signature bites with Apple Crumble Perogies. Classic potato and cheddar dumplings are dusted with cinnamon sugar, filled with apple pie flavours, and topped with vanilla glaze and a crunchy crumble.
At Corndog King, the Ube Corndog pairs sausage and mozzarella cheese in a purple-hued ube batter, rolled in ube panko, and drizzled with Kewpie mayo. The result is a mix of savoury and subtly sweet flavours.
The Canadian theme is strong at Big Cocos, where the Canadian Corndog features a maple bacon batter, fried crisp and topped with extra bacon and maple syrup. It’s a bold take on a midway favourite.
Little Donut Bakery is offering Tarte au Sucre Donuts, inspired by Quebec’s traditional sugar pie. Their legacy of bringing mini donuts to western Canada continues with this sweet addition to the Fair.
Pennsylvania Funnel Cakes elevates the fairground classic with the Dubai Funnel Cake. A golden fried funnel cake is dressed with Dubai chocolate, pistachio crumble, pistachio cream, and strawberries, then finished with whipped cream.
Indigenous chefs are also featured this year at the Safeway Cooking Stage. Chef Sarah Meconse Mierau of Ancestors Café and Tradish Food Truck, along with restauranteur Inez Cook of Salmon n’ Bannock Bistro, introduce Lemonade infused with Sweetgrass and Strawberry, topped with Sopalali foam. The drink highlights traditional ingredients presented through a modern lens.
