As part of Nourish Spring Series by Cornucopia in Whistler, Bearfoot Bistro is hosting Wellness Dinners every Saturday this June.
Guests will enjoy a luxurious four-course meal prepared Executive Chef Melissa Craig. Dishes are thoughtfully crafted with a focus on wellness and ingredients.
We attended the inaugural dinner on Saturday, June 3 and here is all the deliciousness that we had:
Amuse Bouche – Sawmill Bay Oyster with Siberian Caviar
Albacore Tuna Tataki
With Smoked Watermelon, Melon Consommé, Cucumber, Puffed Tapioca, Jalapeno.
BC Spot Prawn & Scallop
With Textures of Spring Green Peas, Bisque, Nasturtium.
63 Acre Beef Flat Iron
With Asparagus Puree, Potato Bone Marrow Croquette, Green Beans, Wild Watercress, Hakurei Turnip.
Citrus Cheesecake
With Local Strawberries, Verbena, Oat Cranberry Streusel.
Wine or mocktail pairings are available
I would recommend the mocktail pairings because they were delicious and creative!
The dinner at Bearfoot Bistro was wonderful and it truly made you feel nourished with all the use of fresh, seasonal ingredients.
