Viking Pancakes Food Truck – Vancouver

A few weeks ago, I headed down to the seawall for an evening walk with my family in the West End.  As we passed by the Long Table Distillery, I spotted a food truck parked in front it.  It was the Viking Pancakes food truck, one that I had not seen around before.   After talking to the owner and chef, I learned that they specialize in Swedish style pancakes in both savoury and sweet flavours.  In fact, the owner herself is originally from Sweden.  I tried their pancakes on two occasions and this post reflects my experiences from both times.

Eat like a Viking

Viking Pancakes describes a Swedish style pancake as “a satisfying meal, fit for a Viking” such that you would be full for a couple of hours.  In terms of thickness, it is between a crepe and a North American pancake.  It also contains more eggs than a crepe, which suggests that it is higher in protein and make you feel fuller longer.  

Sweet Arctic Jams

The first time I stopped by their food truck, they had samples out on table of their pancakes with specialty jams: cloudberry jam and lingonberry jam.  The owner mentioned she imports these jams from Sweden and ensures that they are genuine.

The samples were so delicious that I decided to then have a full order ($8), which came with two pancakes, 100% organic whipped cream, and the two jams.  I definitely tasted more egg in the pancake, and the pancake texture was chewy.  The jams were both deliciously sweet with a slightly sour flavour.

Savoury Style

A few weeks later, I tried a savoury pancake with feta cheese, capers, sweet peas, olives, figs and walnuts ($10).  It was again very tasty with lots of flavour from the mix of savoury filling.

Overall Impression

I appreciate how Viking Pancakes focuses on staying close to authentic Swedish pancakes.  Their pancakes were fit for a Viking, and made me feel fuller longer!

You can find Viking Pancakes’ location through the Vancouver Streetfood app.  They will also be parked outside the Long Table Distillery on Saturdays this summer.
