For the next three months, Swiss International Air Lines (SWISS) will be serving First and Business Class guests culinary creations from Canton Aargau on its long-haul flights from Switzerland. The FAHR restaurant, located in the Aargau village of Künten, is the proud holder of one Michelin star and 17 GaultMillau points. The restaurant’s kitchen is led by 29-year-old chef de cuisine Manuel Steigmeier, alongside his wife Alexandra, the restaurant’s chef de service. Ideally situated between the River Reuss and the picturesque Reusstal recreational area, FAHR is known for its purist culinary presentation and its extensive use of local and regional ingredients.

“The concoctions of Manuel Steigmeier blend classic elements with a fresh creative touch – a combination that fits excellently with SWISS,” said SWISS Head of Brand Experience Julia Hillenbrand. “I’m delighted that we can now take our inflight guests on this exciting culinary journey.”

SWISS First travelers can enjoy a starter of char tatar with dill mayonnaise, cucumber, and yogurt mousse, followed by a choice of main courses: braised veal cheeks with gremolata, cherry jus, and mascarpone polenta or sautéed cod with chimichurri, creamy fregola sarda, and roasted autumn vegetables. A chocolate financier provides a sweet conclusion to the First Class meal.
For SWISS Business Class guests, Manuel Steigmeier created a starter of marinated salmon trout with wild herb salad. The main course selection includes Beef Stroganov with spätzli, beetroot, and sour cream or sautéed pikeperch with Riesling beurre blanc, lye bread dumpling, and broccolini. The Business Class dessert features a chestnut cake with vanilla whipped cream, mandarin, and calamansi gel.
SWISS’s new three-course Premium Economy Class meal is also inspired by Canton Aargau’s cuisine. Premium Economy travelers will be able to enjoy Habsburger Ritterkäse and Aarenberger cheeses, along with the canton’s famed ‘Rüeblikuchen’ carrot cake with crème diplomate.
