Bar Susu Vancouver: Natural Wine Bar with Eclectic Small Plates

Bar Susu is a MICHELIN-recommended contemporary dining spot located in Vancouver offering a unique, rotating menu of eclectic small plates that blends global influences with a focus on locally sourced ingredients. They are a sister concept of MICHELIN-starred Published on Main that is known for their innovative approach to modern dining.

I visited Bar Susu with a friend and here is what we tried:

Salt and Vinegar Chips with malt vinegar
A simple but addictively tangy starter. The sharpness of the vinegar perfectly balanced the crispy texture of the chips.

Hamachi Crudo, tomato, ponzu
The freshness of the hamachi, paired with the bright acidity of the ponzu and sweet tomato, made for a beautifully balanced bite which felt light yet flavourful.

Wagyu Tartare, Thai basil, fried shallots, rice cracker
Rich and luxurious, the Wagyu tartare was packed with umami. The addition of Thai basil brought an unexpected but welcome herbaceous note, while the crispy rice crackers added a nice textural contrast.

Kentucky Fried Maitake with harissa mayo
The maitake mushrooms were crispy and perfectly spiced to a flavour similar to Kentucky Fried Chicken. The harissa mayo added a smoky kick that complemented the earthy mushroom flavors.

Porchetta, cauliflower, garlic scape and chimichurri
The porchetta was cooked to perfection, with crispy skin and tender meat. The cauliflower and garlic scape added a pleasant crunch, while the chimichurri provided a fresh, zesty punch that brightened up the dish.

Blueberry sorbet with rhubarb jam and granita
This dessert was refreshing and light, with the sweetness of the blueberry and tangy rhubarb coming together beautifully. The granita added an icy texture that made it the perfect palate cleanser to end the meal.

I had the Blossom mocktail with lemongrass, eucalyptus, orange blossom, goji berry and rowan berry. My fried tried the Radice – Paltrinieri and the Elios Modus Bibendi Bianco Macerato.

The ambiance at Bar Susu is intimate and casual, making it a perfect place for both an adventurous meal with friends or a laid-back evening of drinks and bites. The bar also boasts a carefully curated selection of natural wines and craft cocktails. It’s a place where culinary creativity meets a relaxed atmosphere, appealing to those looking for something fresh and exciting.

Overall, I enjoyed the modern, playful dishes with a thoughtful balance of flavours, textures, and presentation of the dishes. I’d be interested to revisit in the future.
