Plant-Based Saucy Chipotle Tofu Recipe

Ingredients

  • ½ cup Tomato Paste
  • 2-3 Tbsp Canned Chipotle Peppers in adobo sauce (or more for spicier)
  • 1 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Chile Powder
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • 2 Tbsp Canola or Avocado Oil
  • 1 ¾ cups Water
  • 2 Packages (350 g each) Extra Firm Tofu

Directions

  1. In a small bowl, mix together tomato paste, minced chipotle peppers, all of the spices and salt.
  2. In a large saute pan, heat oil over medium heat, then add the paste mixture. Heat for 1-2 minutes, stirring constantly. Slowly pour in the water and stir until combined. Bring to a gentle boil.
  3. Add the tofu and stir until combined. Cover with a lid or foil and reduce heat to medium low.
  4. Simmer until sauce thickens and tofu is heated through; about 10 to 15 minutes. Stir occasionally. Taste and adjust seasonings, if necessary.
  5. Serve with soft or hard shell tacos
