Plant-Based Saucy Chipotle Tofu Recipe

Ingredients
- ½ cup Tomato Paste
- 2-3 Tbsp Canned Chipotle Peppers in adobo sauce (or more for spicier)
- 1 tsp Ground Cumin
- 1 tsp Smoked Paprika
- 1 tsp Garlic Powder
- 1 tsp Chile Powder
- 1 tsp Salt
- ½ tsp Black Pepper
- 2 Tbsp Canola or Avocado Oil
- 1 ¾ cups Water
- 2 Packages (350 g each) Extra Firm Tofu
Directions
- In a small bowl, mix together tomato paste, minced chipotle peppers, all of the spices and salt.
- In a large saute pan, heat oil over medium heat, then add the paste mixture. Heat for 1-2 minutes, stirring constantly. Slowly pour in the water and stir until combined. Bring to a gentle boil.
- Add the tofu and stir until combined. Cover with a lid or foil and reduce heat to medium low.
- Simmer until sauce thickens and tofu is heated through; about 10 to 15 minutes. Stir occasionally. Taste and adjust seasonings, if necessary.
- Serve with soft or hard shell tacos
