It’s been 10 years since the Fairmont Pacific Rim opened its doors to the first guests. To celebrate, the luxury hotel is hosting a number of celebratory events and experiences for the public.
These include special dining events, cocktails menus, international bar pop-ups and limited edition room offers.
An Evening with Botanist
On Wednesday, March 11, Botanist will host a celebratory 10-course evening of culinary artistry, under the direction of Botanist Executive Chef Hector Laguna.
The 10-course dining experience will explore the bounty of the Pacific Northwest while diners will indulge in a lineup of exclusive dishes that are making a one-night only appearance.
Tickets are $268.00 CAD per person, with optional wine pairings for $128 per person (excluding taxes, gratuities) and can be purchased online here.
The Savoy’s Beaufort Bar Pop-Up
Botanist Bar will present a unique pop-up experience in partnership with the iconic Beaufort Bar at The Savoy, bringing its famed Interpreted Magic cocktail menu across the pond from London, UK to Vancouver.
For two evenings only on Wednesday, April 15 and Thursday, April 16, a trio of Beaufort Bar’s newest cocktail creations led by Beaufort Senior Bartender Jo Last will be paired with an inventive menu designed by Executive Chef Hector Laguna.
The evening will begin in the Botanist Garden and feature a sensory cocktail and food pairing experience inspired by the principles of interpreted magic, with elements of theatrical pageantry.
Botanist Bar will also feature a special limited cocktail menu of Beaufort Bar and classics from The Savoy to be enjoyed à la carte, from April 15-18, 2020.
Tickets to the cocktail-pairing events are $148.00 CAD per person and can be purchased online.
The Ultimate Dinner Party
The hotel’s Prime Minister Suite has played host to many celebrities, dignitaries and artists over the years, and will be the host venue for the Ultimate Gold Medal Dinner Party.
This rare in-suite experience, perched on the hotel’s 22nd floor overlooking Coal Harbour and the iconic Olympic Cauldron, begins with a cocktail reception of award-wining cocktails, live music and a decadent four-course dinner.
The evening will be an intimate affair, taking place in the suite’s dining room for eight guests, hosted by a special guest of honour.
A personalized menu and wine consultation in advance are included for a truly personalized culinary display.

Past, Present & Future: The Legacy of The Lobby Lounge and RawBar
The Lobby Lounge is Fairmont Pacific Rim’s original cocktail bar, featuring daily sets of live music, accompanied by a 100% Ocean Wise sushi program.
Under the direction of Creative Beverage Director Grant Sceney, the iterations of the cocktail menus have taken nods from international travel and the stories that globetrotting inspires.
To celebrate, The Lobby Lounge will see the addition of a feature Past, Present & Future list, highlighting a premier return, a current lounge favourite, and what the team of award-winning bartenders are predicting as ‘the future of the cocktail’. The trio of cocktails will be available from February 10-29, 2020.

giovane’s signature sugar bun is adding some gold bling this month in celebration of the hotel’s 10th Anniversary and giving nod to the anniversary of the 2010 winter games.
