Grillworks Infierno
One of the exciting aspects of CinCin’s kitchen is their Grillworks Infierno, a two-metre behemoth of stainless steel that features a massive grill and rotisserie. This is what gives each recipe a distinct layer of flavour.
Helming the kitchen is Executive Chef Andrew Richardson along with Chef de Cuisine Andrea Alridge. The open kitchen allows you to look into all the magic that happens for each dish.

So many delicious options for each course of CinCin’s Dine Out Vancouver 2020 including:
Appetizers: parsnip & marsala soup; grilled baby gem salad; or jamon croquetas.
Entrees: beef striploin cooked over fire; arctic char from White Horse; orecchiette al ragu; or risotto of sunchoke with crispy winter roots.
Dessert: chocolate cremeux – caramel espuma or yogurt pannacotta.
Menu Preview
I’ve always been a fan of CinCin and their Dine Out menu offers guests a great tasting of what they have to offer.
The grilled baby gem salad with spiced aioli anchovy vinaigrette and crisped pancetta lardons was a great appetite stimulator.
We also enjoyed all the warm, cheesiness of the jamon croquetas with arugula and salsa rossa picante.
The beef striploin cooked over fire with olive oil mash, winter roots, grilled broccolini and salsa verde is sure to satisfy steak lovers.
I absolutely loved the heartiness of the risotto of sunchoke with crispy winter roots, smoked butter and grana padano.
To finish off a fantastic meal, the chocolate cremeux with caramel espuma, birch syrup and crisped chocolate pearls was absolutely perfect.
Also refreshing was the yogurt pannacotta with pistachio namelaka and oranges two ways.
While everything was top-notch, my ideal three-course would be the jamon croquetas, beef sriploin, and chocolate cremeux.
