Chef Sylvestre Wahid has established his summer quarters at the foot of the Alpilles this month, in the emblematic Auberge de Saint-Rémy, a 15th century building hotel restaurant, in Saint-Rémy de Provence (France), owned by his brother Jonathan Wahid and his sister-in-law Fanny Rey. With ALYA’S by SW, Chef Sylvestre Wahid wants to take guests on a gustatory and sensory journey around spices and the best seasonal ingredients.
The menu features dishes to share, vegetarian options, grilled items, tandoori, seafood and sweet treats.
From the menu to the wine list, ALYA’S by SW promises guests a summer culinary journey to discover the Silk Road between Asia and Orient with signature dishes like “coral lentils and strawberries, simmered in the cardamom, burnt grapefruit”, “heirloom tomatoes in a tandoori spice crust, grilled Puglia burratta served melt-in-the-mouth” and “Blue lobster with garam spices and fresh herbs.”
