Air Canada Expands Signature Class Dining with Michelin-Starred Chef Masaki Hashimoto

Air Canada has introduced a new collaboration with Michelin-starred Chef Masaki Hashimoto, bringing his expertise in Kaiseki cuisine to Signature Class on all flights between Canada and Japan. Known for his Toronto-based restaurant, Kaiseki Yu-zen Hashimoto, Chef Hashimoto has spent decades refining this multi-course dining tradition. His exclusive menu launched on March 1, offering passengers a taste of authentic Japanese culinary artistry.

The in-flight menu will rotate throughout the year, featuring six Kaiseki-inspired dishes. The selection includes a Zensai appetizer such as sautéed lotus root, Komono side dishes like sesame tofu with wasabi sauce, and an Oshokuji main course featuring beef sukiyaki with simmered tofu, scallions, napa cabbage, and red ginger, served with calrose rice and miso soup. Before landing, a brunch casserole is offered to round out the dining experience.

Beginning in the spring, Air Canada will introduce new dishware and tray presentations designed by Chef Hashimoto in partnership with Noritake. The carefully selected dishware incorporates traditional Japanese artwork, further reflecting the Kaiseki philosophy of balance and presentation.

To complement the menu, a premium sake pairing will be available. Hand-selected by Chef Hashimoto’s son, Kei Hashimoto—a certified Kiki sake-shi—the featured Ninki-ichi Junmai Daiginjo Gold is crafted from Gohyakumankoku sake rice. It undergoes Yabuta system filtration, producing a smooth, crisp profile with floral and fruity notes.

Chef Hashimoto’s menu is now part of the Air Canada Signature Class dining experience on all flights between Canada and Japan. The airline offers up to six daily flights on these routes:

  • Vancouver to Narita (daily)
  • Vancouver to Osaka (four weekly)
  • Toronto to Narita (daily)
  • Toronto to Haneda (daily)
  • Toronto to Osaka (three weekly)
  • Montreal to Narita (daily)

This collaboration builds on Air Canada’s commitment to expanding its culinary program, following its largest-ever menu upgrade in 2024, which introduced over 100 new globally inspired dishes and expanded beverage offerings.
