The Hotel Belmont Vancouver is offering an intimate winter-themed cocktail experience with the Frost & Fable Pop-Up Speakeasy on Fridays & Saturdays nights until March 22.

This pop-up cocktail bar is inspired by the glacial beauty of an ice cave and features a curated menu of themed cocktails and bar bites by Chef William Lew (Food & Beverage Director at Pacific Reach) and team.
Some highlights include the “Hatsukari,” a citrus-forward blend of gin, plum wine, and burnt pomelo.



The “Firebrand Marg” gives a smoky twist to the classic margarita with mezcal, Grand Marnier, and smoked salt.



The “Viridis Velvet” is a creamy matcha and whiskey-infused creation with strawberries and lavender bitters.



As for bar bites, the Ice Cave Ice Bowl is a great shareable with oysters, prawns, tuna tartare featuring MAMAintheKitchen shrimp garlic chili oil and lemon taro chips.




Other items include the Fire Torched Fried Chicken finished tableside with a caramelized glaze.

We also tried the Calamari which is paired with wasabi ume aioli and chili threads.
