Jason Chan, a renowned Chicago restaurateur, has opened Gavroche in Old Town today, a 32-seat boutique restaurant offering modern French cuisine.

The menu, developed by Executive Chef Mitchell Acuña, embraces classic French techniques while reimagining them through a contemporary lens. This new venture embodies Chan’s passion for French cuisine, cultivated over decades of experience.

Gavroche features an 18-item a la carte menu showcasing dishes such as Charred French Radishes, served with salted butter and fennel pollen, and Hamachi “Niçoise”, with egg yolk confit and white anchovy vinaigrette. The Turbot Au Four Beurre Blanc offers a delicate balance of Polanco caviar and smoked crème fraîche beurre blanc, while the King Louis Royale, a wagyu brisket burger, impresses with raclette, black truffle aioli, and beef fat pommes frites.
Pastry Chef Christine McCabe curates an enticing dessert selection, including a Crème Brulee Duet, which changes seasonally. Chan has also curated a boutique wine list, along with a thoughtful cocktail menu featuring inventive rum, whiskey, vodka, gin, and tequila-based drinks, as well as spirit-free options using teas, adaptogens, and seasonal ingredients.
The restaurant’s décor evokes a luxurious, yet intimate, atmosphere. Chan sourced antique furnishings from around the Midwest, combining gothic elements with art deco details. The result is a stylish, sophisticated setting, with smoked mirrors, vintage fixtures, and Italian mohair banquettes, designed to make dining at Gavroche a memorable experience.
Gavroche is open for dinner from 4:30 to 11 p.m., six days a week, with brunch and lunch services planned soon. Reservations are available for parties of six or more, and for seating at the Chef’s Counter.
