Wild Blue Restaurant & Bar in Whistler [My Experience]

I had the pleasure of being hosted at Wild Blue Restaurant & Bar in Whistler, one of the newest and hottest restaurants in town.

Luxe Seafood-Centric Dining Destination

The restaurant is a luxe seafood-centric dining destination serving Pacific Northwest cuisine along with prime cuts of meat from Alberta and Japan.

You are in good hands because the partners at the forefront of Wild Blue include three industry veterans: Neil Henderson (former restaurant director and sommelier of Araxi Restaurant); Chef Alex Chen (Executive Chef at Boulevard Restaurant in Vancouver); and Jack Evrensel (founder and former operator of the award-winning Toptable Group).

Wild Blue was also named one of the Top 10 Best New Restaurants in Canada’s 100 Best.

What We Tried

On our visit to Wild Blue we tried the following which is just a light sampling of what they have to offer. For some context, we were trying multiple restaurants that day so we just went with an abbreviated dinner experience.

The dishes were all very delicious being elevated, well-executed and nicely presented. The octopus was cooked perfectly being tender and not overly chewy. The linguine was al dente and the sauce was delicious. The sablefish was wonderfully buttery and had a tasty, savoury roasted fish bone sauce.

Interior

The restaurant is beautiful, contemporary and warm. I thought the the little lamps on each table were a nice touch. I appreciated it because I don’t particularly like very dark restaurants. There is also bar seating and patio seating.

All in all, Wild Blue is a must-try elevated dining experience in Whistler. The relaxed but refined upscale environment was inviting and welcoming. The food was very good and you will not be disappointed.
