Harrison Cheney of Michelin-starred Sons & Daughters in San Francisco will welcome Swedish Chef Jacob Holmström from Wednesday, January 24 to Thursday, January 25, 2024 for a two-day guest chef collaboration. Both Chef Cheney and Chef Holmström have had a lifelong fascination with the art of gastronomy and their journey into the culinary world began at an early age in the kitchen.
Chef Holmström welcomed Chef Cheney into the kitchen at the two-Michelin starred Gastrologik in Sweden not once, but twice. Cheney expanded his creativity under the guidance of Holmström and became further educated about promoting sustainability and local produce. The collaborative two-night dinner series will continue to explore New Nordic techniques and Northern California ingredients in 20 alternating courses, which will include Caviar d’Aquataine Perlita, as well as cured local fish, seasonal products, and preserved goods.
For Chefs Holmström and Cheney, modern day sustainability is a core value in their culinary philosophies, which involves knowing how, when, and where the food comes by buying direct from local producers, purity of the ingredient, and zero-waste waste cooking. From California to Sweden, both take a unique, minimalist approach and their styles embody the progressive wave of Scandinavian cooking.
In 2023, after nearly 12 successful years in Stockholm, Holmström made the decision to close Gastrologik and now for two nights only, diners have an opportunity to experience this unique collaboration between the two chefs. Holmström plans to open a new restaurant in spring 2024 in Sweden called Fyr, and in the meantime, the dinners on January 24 and January 25 at San Francisco’s only new Nordic restaurant will be the only time to take a seat at Chef Holmström and Chef Cheney’s table.
The new Beverage Director David Kovek of Sons & Daughters will curate pairings that focus on wines from mountainous regions, both the European Alps and here on the West Coast, which pays homage to the winemakers toiling in those challenging alpine conditions.
