Here’s a look at my experience.

To start, the Split Pea Soup was smooth and savoury, while the Foie Custard brought a rich, satisfying contrast. The Creton with brioche added a familiar and comforting touch.

I really loved the Escargots À L’Ail En Bouchées De La Reine, where the pastry was crisp and the garlic butter was rich.

There was the Truite Mariné & Fumé, Crème À L’Aneth & Pain De Seigle featuring steelhead trout that carries a gentle smokiness, balanced by the freshness of dill and the texture of rye bread.

Pâté En Croûte Du Jour was pork pate with hazelnuts, pickled spaghetti squash, and grainy mustard was structured and flavourful.

The Ravioli Au Gruyère, Jambon De Canard & Consommé D’Onion was warm and comforting, with the cheese filling complemented by the savoury notes of duck and a light onion broth.

The larger plates continue with Terrine Chaude De Homard, where the lobster and scallop come through with a natural sweetness in a soft, delicate texture.

The Lapin À La Moutarde Pour Deux or Roasted Rabbit for 2 was tender and well-seasoned, with the mustard sauce adding a gentle sharpness and the aligot providing a smooth side.

Dessert continued the focus on maple. Tartelette Au Sirop D’Érable & Sapin brought sweetness with a subtle herbal note, while Profiterole À L’Érable, Pommes & Thé du Labrador offerred a lighter finish with soft pastry and fragrant custard.

For drinks, the Fruit D’Feuilles was bright and refreshing, with citrus and ginger lifting the palate, and the Mulled Wine was warming.

This Cabane à Sucre menu presented a thoughtful interpretation of Québec’s seasonal cooking, with familiar flavours carried through each course in a consistent way.
