Quesada’s Recipe for Spicy Chipotle Chicken  

To make it easier for the home cook to prepare, this at-home recipe uses canned chipotle peppers in adobo sauce. Perfect for making burritos, bowls, tacos or delicious nachos at home.

Serves 4

Ingredients

  • 1 lb boneless, skinless chicken thighs, diced into small pieces
  • 1 Tbsp canola oil
  • ½ cup diced onion
  • ½  tsp salt
  • ½  tsp pepper
  • ¼-1/3 cup finely chopped canned chipotle peppers in adobo paste (more or less to taste, depending how spicy you want it) 
  • ¼ cup water

Directions

  1. In a large saute pan, heat oil over medium heat.
  2. Add onions and cook 2-3 minutes until they start to soften.
  3. Add chicken, season with salt and pepper, and cook until chicken is almost done.
  4. Add chipotle peppers and water.
  5. Simmer until sauce thickens, the chicken cooked through, and coated with sauce.
  6. Adjust seasoning and enjoy!
