To make it easier for the home cook to prepare, this at-home recipe uses canned chipotle peppers in adobo sauce. Perfect for making burritos, bowls, tacos or delicious nachos at home.

Ingredients
- 1 lb boneless, skinless chicken thighs, diced into small pieces
- 1 Tbsp canola oil
- ½ cup diced onion
- ½ tsp salt
- ½ tsp pepper
- ¼-1/3 cup finely chopped canned chipotle peppers in adobo paste (more or less to taste, depending how spicy you want it)
- ¼ cup water
Directions
- In a large saute pan, heat oil over medium heat.
- Add onions and cook 2-3 minutes until they start to soften.
- Add chicken, season with salt and pepper, and cook until chicken is almost done.
- Add chipotle peppers and water.
- Simmer until sauce thickens, the chicken cooked through, and coated with sauce.
- Adjust seasoning and enjoy!
