The pastry chef at Patisserie Le Pont is Makoto Yamaguchi, who honed her skills at Le Cordon Bleu in Paris, France and worked in top patisseries in Paris, France and Tokyo, Japan. She also had her own successful patisserie in Tokyo for 15 years.

Patisserie Le Pont was named after their desire to the bridge between Canadian and Japanese cultures.

Their products are handmade and baked in house. They source sustainable ingredients to craft their eclairs, including local farm-fresh eggs, seasonal fruit, Japanese tea leaves, and chocolate imported from France.

I got the Japanese Tea Assortment ($8) in Vanilla, Chocolate, Matcha and Hojicha. There was also the Sweet Eclair Assortment ($12) in Blueberry, Chocolate Mousse, Coffee Butter Cream, and Coconut Yuzu.

I enjoyed the delicate choux pastry shells and tasty cream fillings of these bite-sized crispy puffs.
