Executive Chef Richard Crespin’s menus are innovative in flavor – with dishes ranging from fundamentally familiar to decadent – and influenced by Spanish, Japanese and French cuisines. Brunch selections include Pain Perdu with brioche, berries, butter and maple syrup; Quiche Florentine with creamy baked egg, baby spinach, gruyere cheese, and pomme frittes; and Chicken and Waffle with wild rice waffle, fried chicken breast, Nashville hot sauce, watercress and maple syrup. Among highlights on the dinner menu are Lobster Tartine served with Ostera caviar and Roasted Salmon with butternut squash, roasted mushrooms, and rosemary ginger chili vinaigrette. Sharable dishes for the table include By Land with a variety of meats & cheeses and By Sea, featuring seafood selections.
