If you’re unfamiliar, warabi mochi is a traditional Japanese dessert made from bracken starch, water, and sugar, which gives it a soft, jelly-like texture and a translucent appearance. You can enjoy it chilled, coated in roasted soybean flour (kinako) or matcha, and drizzled with a dark sugar syrup (kuromitsu).

Unlike daifuku or kirimochi, which are made from pounded glutinous rice and have a dense, chewy structure, warabi mochi is traditionally made from bracken starch. This gives it a translucent appearance and a texture that is far softer and more delicate. When made properly, it does not stretch or resist, it jiggles and melts gently on the palate.

During the pop-up, the mochi is made fresh daily using careful temperature control and timing, a process that has earned the brand a loyal following across Japan.  Options include a coating of fragrant roasted kinako or a dusting of premium Uji matcha.

The pop-up menu includes warabi mochi in roasted kinako at $11.99, Uji matcha at $12.99, or a half and half combination for $12.50. The drinkable lineup includes a matcha warabimochi latte at $6.99, matcha strawberry at $7.99, hojicha at $6.50, hojicha strawberry at $7.50, and a strawberry warabimochi latte at $5.99.

Matcha and hojicha warabi mochi drinks will also be available, combining chilled tea based beverages with soft pieces of mochi. These drinks offer another way to experience the brand’s signature texture, lighter than a traditional dessert but still distinctly indulgent.

For Vancouver, this limited three day appearance offers a rare chance to experience warabi mochi as it is meant to be, freshly made, quietly refined, and rooted in Japanese tradition.
