One of the newer Japanese restaurants in Vancouver, Hoshi Japanese Cuisine, has newly launched an exquisite multi course Authentic Kaiseki menu.
There are two options: the Matsu Set Menu featuring 9 courses or the Take Set Menu with 11 courses. Both must be preordered in advance.
Chef-Owner Sean is a master at Japanese Cuisine.
His culinary career spans 30 years and he spent 20 years at luxury Hotel New Otani in Osaka where he focused on Kaiseki cuisine.
Also noteworthy was that he was an apprentice Chef of Emperor Akihito of Japan.
Hoshi Japanese Cuisine Kaiseki multi course is Authentic Kansai style featuring local farm-to-table ingredients as well as special seafood imported fresh from Japan.
I was hosted at Hoshi Japanese Cuisine and had the pleasuring of trying the Mastu Set featuring:
Starter: Mozuku Tororo, Bafun Uni, Ikura Tosazu
Appetizer: Awabi Umani, BBQ Duck Breast, Yaki Ginnan, Octopus natto, Deep fried Shrimp
Clear Soup: Matsutake Soup with Clam, Okra, Uni stuffed fish ball, Lemon skin
Sashimi: Bluefin Chutoro, Hamachi, Hotate
Shiizakana (hot dish): Sea nail Sea salt Grilled, Taro, Aspara
Grilled: Renko Tai Yuan yaki, Miyazaki A5 Wagyu Saikoro, Hagikami
Deep fried: Lotus Lobster Tail with Ponzu Dashi
Shokuji (near end of meal course): Oyster Congee
Dessert: Perfectly ripe persimmon from Spain
They also offer a wonderful selection of sushi and sashimi. I had the opportunity to try the Hamachi, Sockeye Salmon, Amaebi, Hotate, Saba, Foie Gras with Mango Sauce.
Hoshi Japanese Cuisine’s interior is modern and inviting. On a sunny day, their patio is filled and you can enjoy marina views.
Overall, I enjoyed the freshness and quality of the dishes as well as the presentation of the items.
There are not many restaurants offering a Kaiseiki menu in Vancouver as well as being crafted by expertise. If you’re interested, I recommend giving Hoshi’s Kaiseiki menu.
