On my visit to Calgary, I had the opportunity to try Fuwa Fuwa, North America’s largest handcrafted soufflé pancake and dessert cafe brand.
Fuwa Fuwa, meaning “fluffy fluffy,” specializes in soufflé pancake. Each pancake starts with egg whites whipped to soft peaks, crucial for their airy texture, and is then cooked very slowly at a low temperature. With a delicate balance between a soufflé and a traditional pancake, soufflé pancakes are soft, bouncy, and light.
The brand started in Greater Toronto in 2018 but has now expanded with locations in Calgary, Edmonton as well as in the United States and United Kingdom.
Originating from Japan, handcrafted soufflé pancakes were traditionally served at weddings and celebrations for good fortune. Now, they have evolved into a treat for every occasion, from breakfast to brunch to dinner, and everything in between.
The brand takes pride in locally sourced milk; fresh cracked eggs with no additives or preservatives; house-made sauces as well as offering a variety of toppings and fruit combinations.
Some soufflé pancake options include Strawberry, Tiramisu, Nutella Banana, French Toast and more. Other items on their menu include Roll Cakes, Macarons, and Croffles. For drinks, they have Espresso Lattes, Speciality Lattes, Iced Teas, Lemonades, Frappes and so forth.
I visited their Kensington, Downtown Calgary location and tried their seasonal Mango soufflé pancake, Matcha White Chocolate soufflé pancake as well as Strawberry Frappe and Raspberry Lemonade. We loved the airy pancakes with fresh toppings as well as the refreshing drinks.
I also enjoyed the minimalist and relaxing space at the Kensington location.
Overall, I had a great first visit at Fuwa Fuwa and would love to return again to try out more of their offerings.
