Farm & Fire Banff Alberta: Wood Fired Dining

Farm Fresh. Wood Fired. These are the concepts behind Farm & Fire Banff – one of Banff’s newest restaurants.

The menu at Farm & Fire Banff was designed by Chef Scott Hergott, recognized for his award-winning culinary innovation at the Banff Gondola’s Sky Bistro. The menu pays homage to wood-fired and slow-roasted staples.

Hergott’s farm-to-table philosophy is evident throughout the menu with each dish punctuating his simple and fresh approach featuring ingredients by local Canadian farmers.

Their menu changes based on seasonality, but some items to try include:

Tea & Tomato salad
Green tomato, pickled red onion, arugula, goat feta Rocky Mountain wildflower tea vinaigrette

Compressed Watermelon Salad
Ice-wine compress watermelon, red onion, blue cheese, cold pressed canola, balsamic vinegar reduction

Strawberry Ricotta Bruschetta
Charred shallot, strawberries, lemon honey whipped ricotta, basil, balsamic reduction, toasted sourdough baguette

Fungi Pizza
Foraged Mushrooms, Truffle Cream Sauce, Fior di Latte, Caramelized Onions, Parmigiano Reggiano, Basil Pesto

The “Late Night” Snack
San Marzano Tomato Sauce, coppa, carmelilzed onion, mozzarella, pepperoni, salt & vinegar crisps, fresh parsley
