Arc Restaurant at the Fairmont Waterfront in Vancouver BC has launched a new Spring menu and the dishes are beautifully crafted and executed!
We had the opportunity to try some of their new offerings including:
APPETIZER
Raw Dungeness Crab with fine herbs, avocado, seaweed crisps
The Dungeness Crab meat was very soft and fluffy and went well with the creamy avocado and crisp seaweed chips.
MAINS
Haida Gwaii Halibut citrus beurre blanc, salmon roe caviar, cavalo nero, chive oil
I loved the moist halibut filleet and the salmon roe caviar for bursts of salty, fishy juice.
Sungold Lamb Chops with crushed potatoes & olives, carrot puree, salsa verde, lamb jus
A delicious protein dish with tender lamb chops and a luscious carrot purree.
DESSERT
Chocolate Cake with espresso crémeux, hazelnut feuilletine, salted caramel gelato
A heavenly slice of chocolate cake with nutty, coffee, salted caramel and chocolate flavours.
Crème Brulee with Bay leaf, apricot preserve, graham biscuit
This had a beautiful caramelized top, flaky graham biscuits and a fruit apricot preserve.
DRINKS
Rosemary Gimlet featuring Hendricks, Chartreuse, honey syrup, lime juice, rosemary. A cocktail featuring ingredients from their rooftop garden and apiary.
Valrhona Hot Chocolate with torched marshmallow
All the dishes were so delicious featuring Ocean Wise seafood and the cocktail and the hot chocolate went well with the meal as well. My idea 3-course would be the Dungeness Crab appetizer; Sungold Lamb Chops; and Chocolate Cake. You’ll also enjoy dining in Arc’s beautiful space featuring soaring ceilings, a bright interior and cozy ambiance.
