Amaya Modern Mexican Restaurant is set to open this January at The Cosmopolitan of Las Vegas. This new dining destination will showcase the coastal flavors and bold spices of Mexico, offering a multisensory experience inspired by the vibrant energy of Tulum.

Created by Michelin-starred chef Jason McLeod, Amaya’s menu features an array of inventive dishes. Highlights include the 2 lb. Whole Lobster paired with chili lobster cream sauce and lime, the tender Birria Short Rib served with corn puree, pickled onion, and cotija cheese, and a visually striking Fajita Board that engages all the senses. Other signature offerings include ceviche, aguachile, tiradito, and lobster enchiladas. With lively DJ beats and captivating performances, Amaya aims to create an immersive dining experience.

The cocktail menu at Amaya is designed for those with a taste for the extraordinary. Options like the Flor de Paloma with reposado tequila, pink grapefruit, and hibiscus foam, and the Fuego @Volcán, featuring mezcal, passion fruit, and a spicy Tajín rim, showcase a creative approach to classic Mexican flavors. The Desert Mirage offers a balanced blend of guava, hibiscus, and Serrano chili syrup, while the Birds of Paradise combines blackberry syrup, pineapple, and passion fruit, finished with black salt.


Signature cocktails also include modern twists on traditional favorites. The mezcal-infused Old Fashioned is served beneath a fragrant rosemary cloud, and the Noche Oscura is a redefined espresso martini blending mezcal, coffee liqueur, and Mexican cacao bitters. A dedicated catador will guide guests through a curated selection of tequilas and mezcals, highlighting the rich heritage of Jalisco.

Designed by Peter Max Bowden and his team, the restaurant’s ambiance draws inspiration from the rustic elegance of the Yucatán Peninsula. With a blend of intimate alcoves and social spaces, Amaya creates a sophisticated yet evocative setting. Spanning 7,180 square feet, the restaurant includes a dining room, bar, and lounge on the 2nd floor of The Cosmopolitan.
