Botanist at Fairmont Pacific Rim has launched Weekday Brunch, offering a curated à la carte menu featuring savoury new dishes and signature brunch items.


Perfect for a meeting over lunch, an afternoon at leisure with friends or the excuse you’ve been looking for to tag-on a mid-week hotel staycation, this pop-up weekday brunch experience is only available until October 31. Available Monday – Friday from 11:30 am – 1:30 pm.

We were hosted at Botanist and enjoyed their lovely Weekday Brunch menu. Here is what we tried:


Poetry in Motion
vodka, grapes, elderflower, rhubarb, lemon, bubbles

Blue Moon
blueberry, thyme, cedar, citrus blend (non-alcoholic)


Hand-Cut Beef Tartare
smoked egg yolk, caper berries, parmesan, sourdough


Pan Seared Sablefish
roasted maitake mushrooms, celeriac, sunchokes, onion jus

Fermented Chili Torched Salmon
mojo de ajo, petit potatoes, cilantro

Brioche French Toast
buffalo ricotta crumb, crème anglaise, berry compote





Black Forest Cherry
morello cherry mousse, dark chocolate cremeux, roasted cherry compote



Strawberry Coconut Panna Cotta
coconut crumble, mint macerated strawberries, coconut cream

All the dishes and drinks for Botanist’s Weekday brunch were perfectly executed and beautifully presented. The Hand-Cut Beef Tartare was a delicious starter with rich, tender beef complemented by a smoked egg yolk. The Fermented Chili Torched Salmon was a unique Mexican-inspired brunch option with a tasty, garlic sauce. I also enjoyed the Brioche French Toast featuring a fluffy block of brioche with a tableside pouring of crème anglaise. The Black Forest Cherry was a fun dessert in the shape of a cherry with luscious chocolate cream filling inside. The zero-proof Blue Moon beverage with blueberry, thyme, cedar, and citrus blend was refreshing.
We had a lovely time at Botanist’s Weekday Brunch and would recommend it.
