While Kansas City, Texas, St. Louis are well represented in Manhattan, there’s only one place specializing in Oklahoma style barbecue, Au Jus. All Au Jus locations, including the newest one Washington Heights, will be open July 4. Au Jus features such rarely seen in NYC Oklahoma BBQ favorites as Tulsa Pulled Pork, dry rubbed with sour orange and spices and Smoked Beef Bologna, known as Oklahoma Prime Rib, all slow-smoked over hickory wood using Griffin’s family recipes. Other specialties include an Oklahoma Onion Burger, two smashed beef patties smothered in fried onions, with yellow mustard, garlic dill pickles and American cheese; Barbecued Pork Sparerib Tips with Oklahoma Gold Mustard BBQ Sauce; and Oklahoma Spicy Beef Hot Links.
