ARC Restaurant at Fairmont Waterfront is expanding their seasonal dining series across the restaurant, beginning with a new fall menu on October 1.

The series was previously offered as an intimate chef’s bench experience, where diners could watch local ingredients being prepared. Selected dishes will now appear on the à la carte menu and the restaurant’s Province to Plate menu, making the experience available beyond the chef’s bench.
The first restaurant-wide showcase, Led by a Love of Oak & Smoke, takes inspiration from the forests, coastline, vineyards and farms of the Pacific Northwest. The menu will feature foraged herbs, root vegetables, orchard fruits, sustainably sourced meats and fish.
Preserving, grilling, slow roasting and fire smoking will be used throughout the menu. Oak-aged wines and barrel-aged cocktails will continue the oak and smoke theme on the beverage side.
An opening dinner will take place on October 1, with limited reservations available online. Selected dishes from Oak & Smoke will remain available at ARC for the rest of the season.
Executive Chef Harris Sakalis will lead the program, which will continue through 2027 with menus based on slow cooking, Pacific seafood and garden harvests. The dishes and ingredients will change regularly with the seasons.
