Executive Pastry Chef Gerald Tan has created two signature chocolates available only at the hotel. Midnight Bloom blends dark chocolate with hints of bark, pine, and rose, reflecting the natural surroundings of the property. Golden Aura offers a smooth texture with caramel and honey. These chocolates are incorporated into Afternoon Tea and desserts at Q at the Empress. A four-piece box featuring Earl Grey with Midnight Bloom, Empress Honey with caramelized white chocolate, Hazelnut Praline with Golden Aura, and Saanich Berry with white chocolate is available in the Lobby Lounge for $20.

Q Restaurant is offering a four-course Valentine’s Day dinner for $135 per person, concluding with a chocolate buffet by Chef Tan. Q Bar is featuring the Come Fly With Me cocktail, made with Stillhead Blackberry Vodka, Crème de Violette, Luxardo Maraschino, and fresh citrus. A dark chocolate fondue with brown butter financier, strawberries, mini madeleines, shortbread cookies, and banana is available for $38.

The hotel’s Grand Romance Package includes an overnight stay, a bottle of champagne, and a box of chocolates from Chef Tan. Until February 16, Fairmont Spa is offering a Valentine’s week special, featuring a 45-minute Kerstin Florian facial and a 45-minute body massage, along with access to spa facilities and a take-home Fairmont Spa candle.
