Boasting a robust wine collection, including wine sourced from the Centennial state, Olivia has intentionally curated each bottle to suit its pasta-forward offerings.
Scott Thomas, Olivia’s wine director and the only Italian Wine Ambassador in Colorado, has started to host wine classes to share his knowledge with those interested in stretching their palate. Held in Olivia’s newly expanded dining room, each of these classes celebrates a specific region of wine, comes with a light dinner and encourages intimate conversation among attendees.
