Buckwheat Soba Noodle Stir-Fry Recipe

Here’s a quick and healthy buckwheat soba noodle stir-fry recipe that is quite flexible in terms of ingredients.

Buckwheat Soba Noodle Stir-Fry Recipe

You can modify for the types of vegetables you want to include but here are the ones I used for inspiration:

  • Buckwheat noodles (1 pack)
  • Garlilc, chopped
  • Green onion
  • Brocoli
  • Mini peppers
  • Shiitake musrhooms
  • Carrots
  • Snowpeas
  • Firm tofu
  • Bamboo shoots
  • Light soy sauce
  • White sesame oil
  • White sesame seeds

Cook noodles as directed. Strain. In a non-stick pan, add some cooking oil and add vegetables. Stir-fry for 5 minutes. Add soba noodles and cook for another 3 minutes. Drizzle some white sesame oil and sprinkle some white sesame seeds on top.
