Here’s a quick and healthy buckwheat soba noodle stir-fry recipe that is quite flexible in terms of ingredients.

You can modify for the types of vegetables you want to include but here are the ones I used for inspiration:
- Buckwheat noodles (1 pack)
- Garlilc, chopped
- Green onion
- Brocoli
- Mini peppers
- Shiitake musrhooms
- Carrots
- Snowpeas
- Firm tofu
- Bamboo shoots
- Light soy sauce
- White sesame oil
- White sesame seeds
Cook noodles as directed. Strain. In a non-stick pan, add some cooking oil and add vegetables. Stir-fry for 5 minutes. Add soba noodles and cook for another 3 minutes. Drizzle some white sesame oil and sprinkle some white sesame seeds on top.
