Attendees can savour local cuisine with invigorating farm-to-table dinners, Sunday brunches and a cultural spring feast. There are also unique experiences like farm visits with tastings, free exercise classes, forest walks and art picnics. It’s a spring culinary and wellness series that will nourish your body and mind.
I had an amazing time at the first weekend of Nourish Spring Series by Cornucopia which featured a true sampling of the month-long programming that food and wellness lovers can expect this June. Here’s a recap of the deliciousness and unique experiences.
Friday Farm to Table Dinner at The Den at Nita Lake Lodge
At Friday’s Farm to Table Dinner at The Den at Nita Lake Lodge, we enjoyed a delicious 5-course dinner with wine pairings by Burrowing Owl Winery.

Nestled on the glacier-fed Nita Lake, by the foot of Mt. Sproatt in Whistler, The Den celebrates the wilderness around.
They create seasonal dishes with local farm-to-table products from their rooftop garden, North Arm Farm and Village Farms with a strong emphasis on plant-based alternatives.
We enjoyed the following dishes for the evening:
- Pea and Pancetta Soup
- Crispy Lamb Salad with fresh Okanagan Cherries
- Spot Prawns with Sugar Snap Peas
- Roasted Venison Loin with BC Foraged Mushrooms
- Farmhouse Cheddar Cheesecake with Pemberton Quince Chutney

The Pemberton Farms Tour & Progressive Lunch educated attendees about sustainable agriculture practices and the bounty of Pemberton Valley’s farms found on many of the Nourish Series menus.

We had the opportunity to learn about sustainable agriculture practices, the farm-to-table movement, and more.
It was an afternoon of fresh air, community, and wellness, and to discover the beauty and bounty of Pemberton Valley’s farms.

The tour featured the following farms:
- Helmer Organic Farm: a fourth-generation farmer family owned and operated farm that has been organic since 1980.
- Laughing Crow Organics: a certified organic vegetable and flower farm.
- Beer Farmers: a fourth-generation organic family farm operation where you can enjoy a range of locally brewed beers.

Wellness Dinner at Bearfoot Bistro
The Wellness Dinner at Bearfoot Bistro featured a luxurious four-course meal prepared by Executive Chef Melissa Craig.
Dishes were thoughtfully crafted with a focus on wellness and ingredients. The menu featured fresh seasonal produce from Pemberton farms paired with local BC shellfish, fish and meats. Dishes we enjoyed that evening included:
- Amuse Bouche – Sawmill Bay Oyster with Siberian Caviar
- Albacore Tuna Tataki with Smoked Watermelon, Melon Consommé, Cucumber, Puffed Tapioca, Jalapeno
- BC Spot Prawn & Scallop with Textures of Spring Green Peas, Bisque, Nasturtium
- 63 Acre Beef Flat Iron with Asparagus Puree, Potato Bone Marrow Croquette, Green Beans, Wild Watercress, Hakurei Turnip
- Citrus Cheesecake withy Local Strawberries, Verbena, Oat Cranberry Streusel

Sunday Brunch at the Station House on Alta Lake
These unique, wellness-focused brunch experiences take place on the peaceful shores of Alta Lake.
The morning began with a scenic walk to the brunch location with stunning views from the trail.
Chef Bruce Worden prepared a nourishing menu which included:
- Mimosa made with grapefruit tonic and fresh orange
- Honey grilled French toast topped with strawberries and basil
- Breakfast bowl with Tomato, Portobello, greens and chipotle poached eggs
- Grilled fruit salad with mint on lemon loaf
