The five-spice consists of star anise, fennel, cinnamon, Sichuan pepper, and clove. The air fried chicken is moist with a crispy skin and has flavours of sweet, salty, bitter, sour and umami.

Featured in this recipe is the Loong Kong Chicken or Taiwanese Chicken – part of BC Chicken’s Specialty Asian Chicken category.

The Loong Kong Chicken is characterized by a more yellow skin and is grown locally and specifically to satisfy a growing market of ethnic consumers both domestically and abroad, with flavours catering towards Asian dishes.

Raised to Canadian standards, you can expect the Loong Kong Chicken (like all BC chickens) to be free of added hormones and steroids.

They are allowed to roam in the barns and are considered “free run.” Furthermore, Canadian chicken barns are thoroughly cleaned between each flock.

All BC chicken farmers participate in Chicken Farmers of Canada’s Animal Care program, a standard with a strong set of program requirements, annual audits, mandatory regulations, and enforcement measures.
