I was really fortunate to have been invited by COBS Bread to their Main Street bakery for the The Sourdough Experience. Along with fellow food bloggers, Jeremy and Adrian from The Food Gays, we were given the opportunity to learn more about what makes sourdough *authentic* from the head bakers of COBS Bread.
Sourdough is a 20 hour labour of love process.
Yes, authentic sourdough requires a lot of love and that love ultimately translates into something that is amazingly delicious. The bruschetta on sourdough that we tried was heavenly.
And the camember, walnuts and fig jam on sourdough were so good…
The cranberry and brie on sourdough slices were divine…
The bakers at COBS Bread are passionate and proud of their sourdough creations.
I felt how passionate the head bakers at COBS Bread are about making sourdough bread. They really take pride in what they do and put a lot of care into making *authentic* sourdough. Andrew, one of the head bakers, gives us an overview of the *authentic* sourdough making process.
How about “Avril Levain” or “Adam Levain”?
Sourdough requires levain, an active bacteria culture that needs to be fed every 24 hours to stay alive. Many of the bakers name their levain in order to be reminded to feed them. Their dedication towards the levain starter extends beyond the bakery as they take it home or even on vacation!
At COBS Bread, they use a liquid levain. David, one of the head bakers, pours the levain in our demo.

I had a great time learning from the head bakers at COBS bread! It really does take love, dedication and care to product bread that is so delicious. Furthermore, timing is everything! Even small differences in the timing can mean differences in the taste of the bread.
Sourdough is now available at COBS bakeries across Canada. From what I heard, customers are loving it and they were a hit during the holidays!
