BC’s Parmigiano Reggiano Week, a celebration of the world-famous north Italian cheese, is on right now between October 22nd and 28th. One of the world’s most important consortiums, Consorzio del Formaggio Parmigiano Reggiano, has partnered with nine of the premier restaurants in BC who are offering special Parmigiano Reggiano inspired dishes. Guests of these restaurants will be reminded by Parmigiano Reggiano is the King among cheese.
Partnering restaurants in Vancouver are Seasons In the Park, Novo Pizzeria & Wine Bar, Ask For Luigi, Water Street Cafe, Giardino, Italian Kitchen and La Cucina. Also participating are The Salted Vine Kitchen (Squamish) and Araxi (Whistler).
Yesterday, I attended a special media tasting at the iconic Bosa Foods in honor of BC’s Parmigiano Reggiano Week. To start, we enjoyed a traditional hand splitting of a wheel of Parmigiano Reggiano. The special knife used has a short, pointed and almond-shaped blade.
Established in 1934, the Consorzio del Formaggio Parmigiano Reggiano protects Parmigiano Reggiano hard cheese by certifying that the production of each wheel of cheese adheres to a strict process, ensuring the highest quality. Each wheel of authentic Parmigiano Reggiano cheese is aged for a minimum of 12 months, and reaches peak flavour after 24 months.
Next, we enjoyed an appetizer with some freshly grated Parmigiano Reggiano.
We then had some amazing housemade spaghetti alla chitarra, Parmigiano Reggiano, lemon, basil, Sicilian olive oil, fresh cracked pepper. Absolutely delicious.
